北京·炸酱面


老北京的炸酱面有百吃不厌的美誉,它可以说是北京人的当家饭了。暑天吃炸酱面,既便利又开胃。直到现在,在北京胡同里的大杂院,仍可以见到这样的情景:街坊四邻在吃饭时聚在一堆儿,端着碗炸酱面,碗里搁一根脆黄瓜,在当院或门洞里一蹲,吃两口炸酱面,咬一口黄瓜,既不耽误聊天,也不耽误下棋,很是幸福~

陕西·臊子面


臊子面,顾名思义由臊子、面条和汤三部分组成。臊子是臊子面的精华,臊子的制作可繁可简,讲究的臊子有肉丁、萝卜丁、蘑菇丁、笋丁、胡萝卜丁等十余种原料翻炒而成,简单的只用萝卜丁、肉丁即可,哪怕只有萝卜丁的臊子面,也是一样的美味。

热干面是武汉最著名的食物之一,是武汉人生活中不可分割的一部分,并成为他们心目中的武汉食物代表。面条纤细根根有筋力,色泽黄而油润,滋味鲜美。拌以香油、麻酱、虾米、五香酱菜等配料,更具特色。如果外地人去武汉,建议去汉口“蔡林记”一吃为快。“蔡林记”是一家有着近百年的老字号小吃面馆,其热干面,晶洁爽口,味道鲜美,深受广大武汉市民的喜爱。若是时间充裕,巷子里的小小热干面摊也不要错过,味道也是超级赞。

山西·刀削面


刀削面,顾名思义,是用刀削成的面。刀削面的刀是有讲究的,普通的菜刀无法削出漂亮的面叶,制作刀削面需要专门的刀,这是一种特制的弧形削刀,用这种刀削出的面叶,中间厚两边薄,形似柳叶。入口口感上佳,滑而不粘,软而不稀,面叶劲道有力,受到广泛好评。

四川·担担面


担担面是成都的著名小吃,但谁也说不清它诞自何时,某年某月就有了挑着扁担沿街叫卖的小贩,主顾吆喝一声停挑子现做现卖,手擀的粗圆面条煮熟了,捞起来舀上一勺炒好的猪肉末。除了那香气,只记得他们的扁担了,因而得名“担担面”。担担面和酸辣粉堪称川面姊妹花,但很多嘴馋的人做得好酸辣粉却做不好担担面,可见一碗好吃的担担面有多难得了。

兰州·牛肉面



兰州牛肉面属于汤面一类。它与美国加州牛肉面不同。加州牛肉面是捞面条加牛肉块,是卤面。兰州牛肉面的最大秘密在于汤,自上世纪初马保子作出第一碗牛肉面至今,这汤的配方代代相传,所谓清汤并非开水混盐,而是几十种佐料与牛肉原汤配制而成,十分美味。
